  • In a small bowl, whisk together the chicken broth, soy sauce, cornstarch, salt, and pepper. Pour the sauce over the chicken and vegetables and cook for another 2-3 minutes, until the sauce has thickened and the chicken is cooked through.

Curry Chicken Stir-Fry:

Ingredients:

  • 1 lb chicken breast, sliced into thin strips
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 tablespoons curry powder
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers
  • 1 can chickpeas, drained and rinsed
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions:

  • Heat the vegetable oil in a large skillet or wok over high heat. 
  • Add the chicken and cook until browned, about 5 minutes. 
  • Add the onion and curry powder and cook until fragrant, about 2 minutes. 
  • Add the carrots, bell peppers, chickpeas, and chicken broth and cook until the vegetables are tender and the sauce has thickened, about 10 minutes. 
  • Season with salt and pepper to taste.

Ginger Sesame Chicken Stir-Fry

Ingredients:

  • 1 lb boneless, skinless chicken breast, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger, grated
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1/2 cup chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons sesame oil
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions:

  • In a small bowl, mix together the chicken broth, soy sauce, honey, sesame oil, cornstarch, and water. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chicken strips and cook until browned on all sides, about 5-6 minutes. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add another tablespoon of vegetable oil and then the ginger and garlic. Stir-fry for about 30 seconds.
  • Add the sliced bell peppers and onion to the skillet and stir-fry for 2-3 minutes, or until the vegetables are slightly softened.
  • Add the chicken back to the skillet and pour in the chicken broth mixture. Stir-fry for another 2-3 minutes, or until the sauce has thickened and the chicken and vegetables are coated in the sauce.
  • Season with salt and pepper to taste.
  • Optional: You can sprinkle some sesame seeds

Serve over cooked rice and enjoy!
